Ever in the search of great flavours and new ideas, I was able to implement a few of my most recent findings on this menu. Firstly, the cucumber sandwiches were ‘buttered’ with light cream cheese mixed with a hint of basil pesto. Then, there was the smoked haddock and saffron tart; a sublime combination in my view. The creamy filling was packed with lots of smoked haddock encased with my light, crispy shortcrust pastry. Lastly, I experimented with partnering romesco sauce with the sweet potato & feta fritters. I thought the fritters would do better with a ‘little something’ along with them and the sauce fitted the bill perfectly. Old favourites were pulled out for ‘pudding’ with the absolute winner being undoubtedly the cherry bakewell cake from the comments and feedback from my appreciative guests.
